Cacao caught my interest early on into my graduate work. I was doing Heart Rate Variability measurements on the effects of specific Chinese Herbs and how they impacted the cardiovascular system. As I was researching one of the herbs (Salvia Militorrhiza), cacao kept coming up time and time again as having many similar properties. After I finished my doctoral research, the interest in cacao really took hold – so much so that I became a Professional Chocolatier and spent over 2 years developing this combination of Chinese herbal formulas and Cacao. These formulas are the same formulas I use clinically and have had great success with them. By combining them with dark chocolate, it becomes a delicious and healthy way to get the effects of Chinese Medicine.
